Health Kick Cabbage and Bean Soup

So, it’s mid-February and I’m still wearing my extra holiday weight.  I need a little something to get my body gearing up for the approaching Spring.  This soup is just the ticket! I’m reminded of my early 20’s when I would eat nothing but a vat of cabbage and tomato soup for a week…this is like that, only less aggressive, and way more delicious!  The recipe includes a ham hock which imparts a richer flavor to the broth, but if you want to forgo it, you’ll have an even more healthful vegan soup! It tastes best when made at least a day ahead of time, and will keep for several days, refrigerated.
