Pumpkin Whoopie Pies

I lived in Portland, Maine after college graduation, and varieties of whoopie pies seemed to be in every bakery, but here in Oklahoma City I rarely come across them anywhere.  I’m here to change all that, and to do it with pumpkin, everyone’s favorite squash.  These aren’t “pies” in a traditional sense, they’re cake-like cookie sandwiches.  If you’ve never had one, then you simply must make whoopie…pies, that is.
