Sheet Pan Sausage and Potatoes with Arugula

This dish is comforting and unfussy, yet looks beautiful on a platter.  I like to make this when I don’t feel like standing over the stove trying to time three dishes to be ready at once.  Prep is easy, and it is open to variety.  You can add butternut squash, use bratwursts, substitute spinach for the arugula, or sprinkle with parmesan…feel free to play with it!
