Frosted Apple Cake

A frosted cake can make a Tuesday feel like a special occasion, especially in my house where my family thinks dessert should happen daily (but doesn’t).  I’ll admit I don’t live for sweets as much as savory foods, but a cake that has soft diced apples and a great texture is something I can get excited about.  This cake is wonderful even without the frosting.  Serve it at breakfast for a fun treat, or warmed with vanilla ice cream.
