Mashed Potatoes with Peas and Pearl Onions

The ingredients for this gem of a side dish are easily sourced year-round, but it has distinctly spring-like flavors to brighten up the dreariest of winter days.  I love this dish alongside a ham at Easter, or roasted salmon on a school night.  The fresh herbs can be tailored to what you prefer- a mix of mint and parsley is especially good. It’s easy to prepare and beautiful to serve, so switch up your mashed potato game by enjoying some extra veggies and the pop of fresh herbs.
