Macaroni and Cheese

Everyone loves macaroni and cheese.  This is an indisputable fact.  This is my favorite go-to mac and cheese recipe.  I love the hint of Dijon and the simple combination of two cheeses, it reminds me of a mac and cheese I ate in Brussels years ago (that one had chunks of ham stirred in, always a yummy addition). Indulgent? Yes. Worth it?  Absolutely yes.  Some people like a breadcrumb topping on their mac and cheese, but my family likes all the creaminess without the crunch, so this one is unadorned.  Note: Add some green chiles to the cheese sauce when you need more spice in your life.
