Vegetable and Tortellini Soup
Yum! I love this soup any time of year. It’s quick to put together, full of veggies, and has some pasta to make it hearty enough for dinner. Zucchinis vary greatly in size, so you may need to quarter them lengthwise if they’re on the bigger side. Cut them to a similar size as the carrots. When serving, top each bowl with a spoonful of pesto, a drizzle of olive oil, a sprinkle of cheese, and pass around some crusty bread.
