Katherine’s Summer Enchiladas

These came to me from my friend Katherine Johnson. She was hosting a party and serving these, and they were delicious. They are bright, full of flavor, and don’t bring on the guilt that most enchiladas do. They are best in the late summer with sweet corn and zucchini from the farmer’s market.
