Secret Weapon Muffins

I grew up eating my mother’s zucchini bread.  This is that recipe in muffin form, so you can make this as a bread if you so choose.  I’ve had to call them “Secret Weapon” muffins because my family thinks that using the word zucchini in the name is a turn off.  These are truly LOVED in my house, and I have to keep them on hand in the freezer for times that my kids need their favorite treat.
