Italian Meatloaf

I have always loved meatloaf, and this one is my favorite to make at home.  I’ve made several meatloaves over the years, and while turkey meatloaf always feels healthier, I always come back to this beef version. I like the richness of the marinara sauce, and the Italian seasonings.  I usually serve warmed marinara on the side for those who like more sauce (and it’s far tastier than ketchup). This recipe is easily doubled if, like me, you get excited about a meatloaf sandwich made from leftovers.  Serve with polenta, or my Mashed Potatoes with Fontina and Sage.
