Pork Verde Tacso

Another slow-cooker recipe to make a weeknight dinner delicious.  This one has just a little prep involved, but you could roast the veggies to make the salsa a day ahead, so you just throw it all in the slow-cooker on your way to work in the morning.  If you like more heat, add fresh jalapeños to the vegetables before roasting.  Here I suggest making tacos, but the possibilities are endless.  You can make sandwiches, burritos, nachos, egg scrambles…Enjoy!
