Grilled Salmon Sandwiches

I’m a huge fan of dining al fresco, and this is a sandwich best enjoyed outside with a cool glass of rosé.  They’re quick to make, and full of flavor.  I like to serve them alongside Smashed Potatoes with Lemon and Feta (theripetomato.com) or sliced summer tomatoes sprinkled with a little salt and pepper.  Most people love it with the bacon, but I find them to be just as delicious (and healthier) without it.
